Since 1967, the Hotel Byblos is the luxurious milestone of Saint-Tropez. It embodies the casual spirit of the city, represents its freedom and expresses its exceptional qualities. At the new poolside B. restaurant, Chef Vincent Maillard is continuing to develop his concept of Byni’z. It’s a dish that allows three to four different tastes built around a common theme. These light bites are a kind of mezze, kemia, antipasti or tapas, depending on the interpretation made by the international clientele of the Byblos…

The Byni’z can be crunched, picked up, pinched or dipped… it’s entertaining, original, creative, and above all, delicious and full of flavors.  There are two ways to choose your Byni’z: the ‘classical’ version (tuna with foie gras and ginger, squid tempura…) or among the 12 ‘innovations’ starting with exotic caviar, shellfish or tropical fruits… Choose your theme, express your mood and just let go and enjoy!

Spoon restaurant

Created more than 10 years ago by Alain Ducasse, Spoon is present today in several countries (Hong Kong, Paris, Mauritius, etc). Spoon by Byblos is located directly by Place des Lices and boasts a beautiful garden-terrace surrounded by trees lit with romantic mini-chandeliers. The cuisine pays tribute to the Mediterranean region with inspirations from the Riviera and also from Italy, Greece, Lebanon or the south of Spain. Spoon by Byblos is exceptional dining, a delightful culinary discovery in a sophisticated yet casual atmosphere.
